These cookies are very soft and chewy, with a rich peanut butter taste. They are also gluten-free, dairy-free, and vegan (no butter).
Ingredients:
- 1/2 cup organic peanut butter
- 1/2 cup organic coconut sugar
- 1/4 cup organic brown rice syrup
- 2 tablespoons ground flaxseed
- 1 teaspoon vanilla extract
- 3 cups gluten-free oat flour
- 1 teaspoon baking powder
- 1 teaspoon salt
Diabetic Peanut Butter Cookies
- 1 c. flour
- 1/2 c. creamy peanut butter
- 1 egg
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 1/2 tsp. baking powder
- 1/2 c. water
- 1 tbsp. liquid sweetener
- 1/2 c. salad oil
Mix all together in a large bowl. Shape into balls and place on an ungreased cookie sheet.
Bake at 375 degrees for 12 to 15 minutes. (You may add a little more flour if desired.)
Diabetic Peanut Butter Cookies Recipe
- 1/3 c. plain flour
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- Pinch of salt
- 2 tbsp. shortening
- 2 tbsp. peanut butter
- 1 tsp. Sweet ‘n Low
- 1 egg, beaten
Mix and stir all ingredients in order (flour, baking soda, baking powder, salt, shortening, peanut butter and Sweet ‘n Low).
Add beaten egg and mix well.
Drop by large teaspoon on greased cookie sheet.
Bake at 350 degrees for 10 minutes.
